butter flavor shortening
1 1/2 cups sugar
1 egg
2 tablespoons light corn syrup
1 teaspoon vanilla
3 cups flour
3 teaspoons ground ginger
2 teaspoons baking soda
1/2 teaspoon grated orange zest
1/2 teaspoon grated lemon zest
1/2 teaspoon grated lime zest

1. In a large bowl, beat together
shortening and sugar at medium speed
until well mixed.
2. Add egg, corn syrup, and vanilla
continue beating until well blended.
3. In a small bowl, mix together
flour, ginger, and baking soda.
4. Add dry mixture to creamed mixture.
5. Add all zests and mix until well
blended.
6. Shape dough into two rolls about
2" in diameter.
7. Wrap tightly in plastic wrap,
and refrigerate overnight or at
least for 3 hours.
8. Preheat oven to 350°F.
9. Slice dough into 1/8" thick
rounds.
10. Place 2" apart on ungreased
cookie sheets.
11. Bake until light brown (6-8
minutes).
12. Cool on cookie sheets for 4
minutes, then transfer to cooling
racks.
